Sweet and Sour Lentils
1 chopped onion
3 cloves minced garlic
2 cups lentils
2 cups vegetable broth
2 cups water
1 bay leaf
1/2 cup brown sugar
1/2 cup apple juice
1/2 cup cider vinegar
1/2 tsp nutmeg
salt and pepper
1 tbsp cornstarch
*Saute onion and garlic in olive oil until soft
*Add lentils, broth, water and bay leaf and bring to a boil
*Reduce heat, cover and simmer for 30 minutes
*Remove bay leaf and add sugar, apple juice, vinegar, salt and pepper and simmer for 5 more minutes
*Add sifted cornstarch and stir quickly until thickened
